Vegetable Banana Semolina/Sooji Cutlet

Servings : makes 10 medium size cutlets

Vegetable Banana Semolina/Sooji Cutlet is a delicious combination of veggies, mashed potatoes and banana semolina. It is crisp outside and soft inside and mouth-watering anytime snack.This mild spicy and crispy snack tastes irrestibly delicious when served hot with spicy,sweet and sour dips like mint chutney,tomato ketchup,tamarind chutney or cheesy dips.


Ingredients

2 medium sized boiled and mashed Potatoes

½ cup (50 gms) Banana Semolina/Sooji

½ cup grated carrot

¼ cup sweet corn

¼ cup green peas

¼ cup finely chopped onion

¼ cup green capsicum

½ tsp ginger-garlic paste

½ tsp salt

½ tsp mixed herbs

½ tsp chilly flakes

½ tsp green chilly paste

bread crumbs for rolling

oil for shallow frying


 Method

1)Mix ½ cup banana semolina/sooji with 1 cup hot water and keep aside for 5 minutes.

2)Add all the mashed potatoes,carrot,corn,green peas,onion,capsicum ,ginger-garlic paste,salt,mixed herbs,chilly flakes,chilly paste and mix well in the above semolina.

3)Divide the above mixture into 10 equal portions.

4)Grease your hands with oil and shape the each portion into flattened round cutlet.You can make them in different shapes by using cutlet moulds.

5)Dip each cutlet in banana flour/all purpose flour batter mixed with salt and pepper.

6)Roll each cutlet in bread crumbs and transfer into a plate.

7)Deep freeze these rolled cutlets for 5 minutes.

8)Heat oil in a non-stick pan/tawa and shallow fry the cutlets till golden brown on both sides.

9)Serve the hot cutlet with tomato ketchup.


Tips and Variations

1)If the semolina mixture is too loose to make cutlets, you can add some banana flour/rice flour and bread crumbs to stiffen it.

2)You can add any variety of vegetables of your choice to make it more nutritious and tasty.

3)You can garnish these cutlets with some grated cheese or coriander.

4)It can be put inside a burger bun along with cheese slice and eaten with tomato ketchup.
