Healthy Upma made from Banana Semolina/Sooji

 Banana Semolina/Sooji  Upma

 Banana Semolina/Sooji is a quick tasty and nutritious preparation using common ingredients available in Indian kitchen.


Ingredients

½ cup (50 gms) Banana Semolina/Sooji

¼ tsp cumin & mustard seeds

10-12 groundnuts

jeera powder

turmeric powder

4-5 curry leaves

3-4 chopped green chillies

1 finely chopped onion

1 ½ cup hot water

salt to taste

2 tsp chopped coriander

shev to garnish

 

Method

1) Heat oil in kadai/heavy based pan. Add semolina/sooji in it and roast it on low flame for 4-5 minutes. Keep stirring continuously. When done transfer to  plate.

2)Heat 2 tsp oil in the same kadai over medium flame. Add cumin and mustard seeds. When they begin to sputter,add groundnuts,curry leaves,onion,chillies and sauté for 1-2 minutes until onion becomes translucent.

3)Add turmeric powder,jeera powder, salt and roasted sooji and sauté for 2-3 minutes.

4)Add hot water and stir continuously to avoid lumps. Cover it with lid and cook on low flame until mixture turns thick for around 3-4 minutes. Stir in regular intervals.

5)Turn off heat and remove lid. Serve hot and garnish with coriander and shev.


Tips and Variations

1)      You can add vegetables of your choice like carrot, green peas, sweet corn, etc. to make it more healthier and tasty.

2)      You can also garnish with cashew nuts & grated coconut instead of shev.
